Scottish Shortbread

1750 (6ozs) Plain Flour
125g (4ozs) Butter at room temperature cut into pieces
500g (2ozs) Caster Sugar plus a little extra for sprinkling
Set the Oven to 160/325F Gas Mark 3


Put flour and cut butter into a bowl and add the sugar

Rub the butter into the flour mixture between your fingertips to make tiny crumbs or use electric mixer

3 squeeze the crumbs together with your hands until they stick together

Roll out and cut with pastry cutter.

Put on a baking tray and put in oven for 20-25 minutes until it is pale golden

Take out of oven and sprinkle with sugar.
