Mary's Ginger Crunch


4 oz Butter

4 oz Sugar

7 oz Flour

1 tsp Baking Powder

1/2 tsp Ground Ginger


Cream the butter and sugar

Add the sifted dry ingredients

Knead well and press into a greased swiss roll tin

Bake 20 - 25 minutes in moderate oven


Put into a sauce pan

2 tbp of butter

6 tbp of icing sugar

2 tsp golden syrup

1 tsp ground ginger


Heat until melted and pour over the base whilst hot and cut into squares before it gets cold.


Optional addition - chopped crystallised ginger
