Easy Peasy Bread
This is nice and not too much work involved!. Makes One large loaf
15oz Strong plain flour
7oz Strong wholemeal flour
2oz coarse porridge oats
1 sachet (7g) dried yeast
½ oz butter or oil
2 teaspoons salt
1 teaspoon sugar
14 fl oz lukewarm water
You can also add 1oz mixed seeds (pumpkin, sesame, linseed,
sunflour) or some chopped walnuts, if desired.
Grease and line the bottom of an 8'' deep cake tin. Mix the dry ingredients in a bowl. Rub in the butter or stir in the oil. Add the warm water and mix to a soft dough. Turn onto a floured surface and knead for10 minutes until the dough is smooth and elastic.
Put the dough into the prepared tin and leave in a warm place (the airing cupboard, the warming oven of your Aga or your second oven on the lowest possible setting) for approx 30 - 40 minutes or until doubled in size.
Meanwhile heat your oven to 230°C/450°F/gas 8
Bake for 25-30 minutes until lightly brown. Turn onto a wire rack and leave to cool.
